There’s been a food craze around TikTok with creators making mini pancakes and turning them into pancake cereal, just like there has been for the Dalgona coffee, a.k.a. whipped coffee. The pancake cereal trend even inspired Disney fans to make mini chocolate chip cookies and sugar cookies to turn them into Mickey Mouse cookie cereal! So what did I make? Mickey-shaped pancake cereal!
Mickey-shaped Pancake Cereal
In this recipe, I’ve included how to make pancake mix from scratch.
Ingredients
- 2 Cups Flour
- 1 Tbsp Cornstarch
- 1 Tbsp Confectioner’s Sugar
- 1/2 tsp Baking Powder
- 1/8 tsp Baking Powder
- 1/4 tsp Salt
- 1 1/4 Cups Milk
- 3 Tbsp Unsalted Butter + Extra for Cooking and Serving
- 1/2 tsp Vanilla Extract
- 2 Eggs
- Maple Syrup
Instructions
Mix together all your dry ingredients to create your flour mixture and set aside. Make sure you don’t have any chunks.
Melt your butter and whisk together all your wet ingredients to make your milk mixture.
Fold in your flour into the milk mixture until completely combined.
Heat your griddle to medium-low heat. If you don’t have a griddle, you can easily use a large pan with a little higher heat, about medium.
While your griddle is heating, transfer your pancake batter to a condiment squeeze bottle with a small tip.
Grease your griddle with butter.
When your griddle is ever so slightly smoking, it is ready.
Squeeze out your Mickey Mouse pancake shapes, about quarter size for the head and dime size for the ears.
Once you’ve formed your Mickey-shaped pancakes, it’ll be time to flip them! (No more than 2 minutes on each side.)
Transfer to a plate and repeat until you’ve run out of batter.
Serve in a bowl with maple syrup drizzled over and enjoy the magic!
