The Star Wars: Galactic Starcruiser — AKA the Halcyon — officially begins welcoming passengers aboard on March 1, 2022, and while we reported that the maiden voyage already booked up, even more nights have reached capacity since then.
As you can see in the screenshot below from the official website, voyages taking place on the entire first week of March, the second weekend, as well as May 5 (the day after Star Wars Day, May the Fourth) are fully booked at this time. The following image shows current availability as of Tuesday, October 12.

General booking for this Star Wars hotel opens on October 28, so if you are still waiting for your chance to book your voyage on the Halcyon, keep that in mind. Disney advises Guests to prepare the following information ahead of booking:

Arrive at the Walt Disney World Resort terminal, board a launch pod and rendezvous with the magnificent Halcyon starcruiser. Stay in a cabin or suite with an exquisite view of space. Throughout the ship, you’ll interact with an eclectic collection of characters, sit down to exotic galactic cuisine and perhaps even plot a secret mission together.
As the itinerary continues, you’ll take the story further and deeper. Choose your path.
