Gideon’s Bakehouse in Disney Springs Is Getting a Second Location: Opening Date Announced

The magic of Walt Disney World isn’t limited to attractions and fireworks—it lives in the rituals guests build for themselves. For some, it’s rope-dropping a favorite ride. For others, it’s a very specific stop at Disney Springs, often made after dark, when the crowds thicken and anticipation grows stronger with every step forward in line.

Disney Springs has become a destination in its own right, a place where food, fandom, and Florida flavor collide. And few locations embody that evolution more than its most infamous bakery—one that has turned cookies into an event and waiting into a badge of honor.

But lately, something subtle has been shifting just steps away from that line.

A Familiar Corner of Disney Springs Is Drawing New Attention

Guests walking through Disney Springs over the past few months may have noticed something curious. Window graphics appeared. Construction filings surfaced. And a once-quiet storefront—previously home to a grooming brand—suddenly felt like it was being watched.

The space sits just a few doors down from one of the busiest food locations on Disney property, a place where wait times can stretch well beyond an hour. Naturally, fans began to speculate. Was Disney preparing a new offering? A replacement? Or something else entirely?

In a district where every square foot is carefully curated, even small changes tend to signal bigger plans.

Why This Area Matters More Than You Might Think

Disney Springs isn’t just a shopping and dining complex—it’s a testing ground. Over the last decade, The Walt Disney Company has leaned heavily into elevated, chef-driven concepts that appeal as much to locals as to tourists. Gideon’s Bakehouse, The Polite Pig, Wine Bar George—these aren’t just restaurants, they’re brands.

And one of them, in particular, has become a lightning rod for conversation online.

Gideon’s Bakehouse has reached near-mythic status among Disney fans. Oversized cookies. Dark, gothic storytelling. Lines that routinely wrap around corners. It’s become one of the most talked-about food experiences at Walt Disney World, rivaling even iconic theme park snacks.

That popularity, however, has come with a cost: congestion, long waits, and a constant question from guests—is it worth it?

Fans Begin Connecting the Dots Online

As always, the internet noticed first.

On X (formerly Twitter) and Reddit, fans began sharing photos of the boarded-up storefront and newly installed graphics. Some speculated it was a satellite Gideon’s location. Others guessed a completely new concept tied to Disney Springs’ growing emphasis on grab-and-go dining.

Reddit threads debated whether the move would finally ease Gideon’s legendary lines or simply create another viral hotspot. On X, longtime visitors pointed out the proximity to Gideon’s as anything but accidental.

Still, nothing official had been confirmed—until now.

The Reveal: A New Gideon’s-Connected Concept Is Coming

On the five-year anniversary of Gideon’s Bakehouse at Disney Springs, founder Steve Lewis confirmed what many had suspected: something new is indeed coming—and it’s deeply connected to the bakery that changed Disney Springs dining.

The new concept, called Six Ravens, will open in the former Art of Shaving storefront near Gideon’s Bakehouse later in 2026.

Six Ravens will specialize in what it calls “Coffyns,” an old-school take on hand pies made with fluffy yeast bread rather than traditional pastry dough. These savory offerings will feature fillings developed by Gideon’s kitchen team in collaboration with Central Florida chefs, bringing local culinary talent directly into Disney Springs.

The menu won’t stop there. Guests can also expect potatoes, desserts, and local draft beer—designed for quick service in a compact space that meets the grab-and-go needs of overwhelmed visitors.

“Combine that with potatoes, local draft beer, and, of course, some tasty desserts, and you will have a fun new place to fuel your park adventures.” Here’s the full announcement:

A Notice of Commencement filed last month lists The First Raven LLC, led by Lewis, as the client for the buildout, confirming the project’s official status after months of speculation.

What This Means for Guests—and the Future of Gideon’s Bakehouse at Disney Springs

Perhaps the biggest takeaway? Relief may finally be in sight.

With Gideon’s Bakehouse regularly drawing hour-plus waits just for coffee and cookies, Six Ravens appears designed to absorb some of that demand—offering hearty, savory options steps away from the original location. While it won’t replace Gideon’s signature desserts, it expands the experience in a way that feels intentional rather than overcrowded.

It also continues a full-circle moment for Lewis, who first made waves at Disney Springs through a secret menu item at The Polite Pig before launching Gideon’s. Now, with Six Ravens, that relationship deepens—blending local Orlando flavors with the massive reach of Walt Disney World.

An exact opening date hasn’t been announced, but with window graphics already teasing the project and construction officially underway, fans won’t have to wait forever.

Is this the evolution Disney Springs needs? Or will Six Ravens become the next line guests race to join?

Either way, the conversation is just beginning—and fans are already lining up with opinions.
