An opening date for The Polite Pig, a new modern barbecue restaurant in Town Center at Disney Springs, has been set for Monday, April 10. It’s the newest eatery from the award-winning husband and wife chef team James and Julie Petrakis.

Dishes will be cooked in an open kitchen so guests can get a peek behind the scenes. The menu will feature barbecue along with Southern side dishes, like tomato and watermelon salad, mac and cheese, and smoked corn with lime butter. There’s a sauce bar with seven different varieties to choose from, ranging from sweet to spicy.

Bourbon fans, this is the place for you. The restaurant will offer more than 50 types of bourbon, from small batch to Pappy Van Winkle 23-Year Family Reserve. A selection of craft beer from the Cask & Larder brewery will be available on tap. Five featured house cocktails will be available on tap as well, including the crowd favorite Ravenous Pig.

Try Julie Petrakis’s favorite dish: the Salmon BLT with bacon jam, marinated tomato, romaine, and aioli. If your mouth is watering, you have only a few more days to wait until you can get your hands on the full menu.
